Language: Russian. Everything in Russia is very, very Russian. It's a beautiful language, and difficult, but you should learn a few key phrases to show interest in the culture. Know how to say "please", "thank you", and the like. Most of the major cities will know English.

Crime & Safety: Russian citizens abhor violence, and they're lovely people. "Don't start none, won't be none," as they say. It's wise to avoid talking politics, religion, or topics that can get a little steamy, as it's "frowned upon" by governmental authorities.
